Woon Nam Maprao is an authentic Thai dessert. If you enjoy coconut and have a sweet tooth this dessert is great to enjoy on a hot, sunny day!
Ingredients
- 2 1/2 cups coconut water
- 2 tsp agar-agar powder
- 1/3 cup white sugar
- 1 Pandanus leaf (optional)
- Food colouring (optional)
Directions
- In a saucepan, dissolve the agar-agar powder in the coconut water. Add the crushed Pandanus leaf, if using. Leave for about 10 minutes.
- Place over medium heat and bring to a gentle boil, stirring constantly.
- Add sugar, keep stirring until it dissolves and the syrup comes back to a gentle boil for about 5 minutes. Take off the heat and strain out the crushed Pandanus leaf (if using).
- You may want to add a drop of food coloring as you like, before pouring it into jello moulds.
- Wait to cool then cover and chill in the fridge for at least 30 minutes or until set.
- Gently press the jelly around the edge to come out from the moulds, before tipping it out and serve.
