Coconut Water Jelly

Woon Nam Maprao is an authentic Thai dessert. If you enjoy coconut and have a sweet tooth this dessert is great to enjoy on a hot, sunny day!

Ingredients

  • 2 1/2 cups coconut water
  • 2 tsp agar-agar powder
  • 1/3 cup white sugar
  • 1 Pandanus leaf (optional)
  • Food colouring (optional)

Directions

  1. In a saucepan, dissolve the agar-agar powder in the coconut water. Add the crushed Pandanus leaf, if using. Leave for about 10 minutes.
  2. Place over medium heat and bring to a gentle boil, stirring constantly.
  3. Add sugar, keep stirring until it dissolves and the syrup comes back to a gentle boil for about 5 minutes. Take off the heat and strain out the crushed Pandanus leaf (if using).
  4. You may want to add a drop of food coloring as you like, before pouring it into jello moulds.
  5. Wait to cool then cover and chill in the fridge for at least 30 minutes or until set.
  6. Gently press the jelly around the edge to come out from the moulds, before tipping it out and serve.
