1 Fresh red goat pepper (or your favorite red chili pepper, for color)
1-2 Thai chilies (for spiciness)
4-6 cloves garlic
1 tsp salt
1/3 cup white vinegar
1/2 cup sugar
1/2 cup water
Directions
In a stone mortar with pestle, or in a food processor, grind the chilies and garlic quite finely. Transfer to a small pot.
In the same pot, add salt, sugar, vinegar, and water. Stir well.
Bring the pot to a gentle boil over medium heat, then reduce to simmer for 3-5 minutes or until sugar is all dissolved and the mixture gets slightly thicker and glossy.
Turn off the heat and let cool. The sauce will be stickier slightly when cool completely. Serve with any deep fried food and enjoy.
You can store in a clean jar in the fridge for a few months.
