Ya-Chong (Crinum thaianum) is a unique emergent plant native to southern Thailand. When deep-fried in a flavorful curry paste batter, it becomes a signature dish of Phuket cuisine known as “Bua-Thod.” This dish features a mix of edible leaf fritters, often combined with small shrimp, and is typically served with “Nam Chor,” a tangy, sweet, and mildly spicy red dipping sauce. While it’s not commonly found in markets, if we’re fortunate enough to source some, we’d be excited to share it with you in our classes!

BaBin is Thai chewy pancake made with sticky rice flour. Simplest version can be as plain as just the rice flour, sugar and coconut milk. Or you can dress it up with black sticky rice flour mixture for color purple, or steamed pumpkin for golden shine effect.
